As a person who is living with Lyme, I suffer from Multiple chemical Sensitivities, Electro Sensitivities, and Food sensitivities and many other Myriad of Sensitivities that makes living day to day a challenge. when I’m making coffee, there are things that I have to consider and be on top of, I’m hoping this article would help you with your Chemical Sensitivies , food sensitivities and reacting to Mold.

Choosing the Right Coffee Beans

1. Opt for High-Quality, Organic Beans

Choosing organic, high-quality coffee beans is the first step towards minimizing mold exposure. Organic beans are less likely to be contaminated with pesticides, which can exacerbate the growth of molds.

I Get this Exact one. And i do not get the Caffeine Crash like I would with others.

I just realised they make a Decaf version for those days you need to indulge with anothe Cuppa without trigerring your insulin if you worry about insulin resistance.

According to Dr Berg from Dr Berg Youtube, its best to drink you coffee before noon. and if you need another hot beverage you can go for a Teecino .

You can do Decaf but with Decaf there is still Caffeine so it may still trigger your Insulin.

I included the Teecino that I drink after my coffee . Made it with real cream or half and half so that i can get my fats in. If you dont already know.. I am on Keto so getting my fat fuel is important to me. Best thing about being on Keto is I get to still enjoy all the delicious food and still Lose weight on top of feeling myself getting really healthy without the sugar and insulin resistence.

2. Single-Origin Coffees

Single-origin beans are often sourced from a specific region and are less likely to be blended with low-quality beans that may carry mold.

3. Fair Trade and Shade-Grown Coffee

These certifications often indicate better farming practices, which can lead to a lower risk of mold contamination.

Simply put, I personally would get organic coffee from this brand, I have success with it so far, Although it also depends on how I brew them. Because if I brew them in an Esperesso Machines, I would still get my Symptoms.

Home Storage

1. Airtight Containers

Brewing Techniques

1. Use Clean Equipment

Regularly clean your coffee maker, grinder, and any other equipment you use for brewing. This helps prevent any residual mold spores from contaminating your coffee.

I use this coffee grinder.

2. Avoid Drip Brewers with Water Reservoirs

Water reservoirs can be a breeding ground for mold if not cleaned regularly. Opt for a pour-over method or a French press, which allows for more direct control over the brewing process.

3. Avoid Espresso Machines

Not all machines are created equal . Hence the more inexpensive machines may use copper heating element hence it may promote Heavy Metal toxicity Whilst you are trying to enjoy your coffee. Better heating element you would want to look for is stainless steel. I have better success with a higher end machines. You should find out what kind of heating elements do they use.

That is why i much rather use coffee press, an Aero press or and American French Press When I make my coffee.

These are the ones I use :

1.Aero Press Coffee.

What I like about the Aeropress travel is that I can bring it everywhere with me during my travels and also still use it at home. the fact that it is affordable is a bonus. Having said that I made my coffee in the morning with this exact one.

This is my favourite coffee maker among the 3 that I own.I love how you can see your water turn to coffee as you press on it.

2. The American French Press Coffee Maker

3. The third I have is a spare in case i have company or guests or for the weekends where allow myself to indulge in an extra dose of espresso. I use them interchangeably.

4.Boiling Water

Use water that has been boiled to at least 200°F (93°C) to brew your coffee. This high temperature helps kill any potential mold spores in the coffee grounds.

4. Brew in Small Batches

Brew only the amount of coffee you plan to drink immediately. Leaving brewed coffee sitting for extended periods can increase the risk of mold formation.
